6'7" and 280 pounds is not that big bro, tall yes, big no. I am 6' and weigh around 260-270 depending on my lifting cycle. However, you are right in that most people don't go tangling with a big guy. I come from a unique background though, I started small and grew. Along the way I was forced to fight and learned to fight as a smaller individual. You learn quickly not to get hit. Now I am a big guy and I don't really throw down too much. I get to throw drunks out of the club but those people are drunk and rarely pose any form of a threat.
As for wanting to fight someone who knows what they are doing, what's the point? Experience is what makes you what you are, practice makes perfect. The only way to get good is to face good fighters regularly. I used to prize that kind of thing, but now I really don't think chasing the next good fighter for the glory is much of a past time. Believe me, you will never know who the good fighters are before you tangle with them, because good fighters don't flaunt it.
The mexican guy didn't sound like much, he was inexperienced and probably not even close to a match physically. Good luck beating on scrawny mexicans.
